Lemon Meringue Cocktail



Is this Lemon Meringue Cocktail calling your name? Using February’s limited edition release, Broken Biscuit Rum with added sweet and zesty ingredients served in a glass coated in biscuits, this cocktail cuts no corners when it comes to indulgence!

February’s Innovations Club brings you Broken Biscuits Rum. Inspired by Farmhouse Biscuits Lemon Biscuits, this release in Junior Distiller, Ryan’s first rum, although not his first Farmhouse Biscuit! He aged Caribbean white rum in a barrel with fresh lemon, vanilla pods, oats and malt. The result is a rum with sweet lemon notes with a creamy finish that’s just asking to be shaken in a cocktail.

Cherish developed this Lemon Meringue Cocktail and we can’t thank her enough, it’s delicious! To make your own you will need:

50ml Broken Biscuit Rum
Squeeze of lemon juice
Spoon of sugar syrup
25ml limoncello
1 egg white
Farmhouse Lemon Biscuits

Method:

Coat the rim of a glass with crushed Farmhouse Lemon Biscuits. Add all the ingredient except the egg white to a cocktail shaker with ice and shake. Add the egg white and shake again. Strain and serve.
